Megan Miller, cofounder of Bitty Foods, set out to make crickets a palatable meat alternative. She’s developed everything from cricket flour (a nutritious blend with 28 grams of protein per cup) to Chiridos, which are air-puffed chips made from crickets, lentils, and spices. Now with a coveted DARPA grant, Bitty Foods is expanding its research into the unknown. In this presentation, Miller will demonstrate how Bitty Foods is in the process of creating unique cricket proteins with potentially vast applications—think global food security and beyond!
